Hello and welcome to this new episode of “Countries and Markets of the World”.
We are on Kyushu Island, located in southern Japan. It’s a little past 3 a.m., and there’s already a lot of commotion behind me as today I’m taking you to visit the fish auction market in Fukuoka City.
Fukuoka is a vibrant city surrounded by a relaxing environment. Mountains, spas, and many parks … In spring, the island is full of cherry blossoms.
But just before going to see how fish are sold here in Japan, I invite you to take a tour of this island, look… Kyushu Island has always been an open door to Asia.
Facing Korea and China, this is where mainland culture entered the Japanese archipelago. Its largest city is Fukuoka: a vibrant city surrounded by a relaxing environment. Mountains, spas, and many parks … In spring, the island is full of cherry blossoms.
But it is throughout the year that nature invites contemplation and meditation. Kyushu has retained a very traditional side with many ceramic artisans and potters working on the island.
It is by hand that the tea is sorted according to the purest tradition. Matcha is a very fine powder of ground green tea that has been crushed between two stone grindstones. Offering and tasting tea in Japan is ceremonial and the art of living.
From 2 a.m., the small trawlers unload their cargo
Return to the Fukuoka auction market… From 2 am, the small trawlers unload their cargo at the fishing port which adjoins the market.
The fish are immediately sorted before being offered for sale. Here, the tuna is emperor, even if alas! it is threatened with extinction due to overfishing.
But let’s look more at how to buy: There is no IT here to manage transactions. Unusual auctioneers in rubber boots shout their orders, doubling them with cabalistic signs.
Almost a martial art! Before, buyers have spotted the fish … Once the appeal is out, customers must deposit their price on the cases of fish as soon as possible.
It is impressive to see such a crowd and such excitement in the middle of the night! Everyone here is wide awake!
We would be unless we heard these Japanese sellers screaming at each other! In this market you will of course find the finely sliced fish that you will then find in the sushi and sashimi restaurants of the city.
Only two centuries old, sushi is as much about gastronomy as it is about fine art. The idea is to find the perfect balance between beauty and flavor … “Bon appétit”!
This is already the end of this episode of Countries and World Markets on Kyushu Island, Japan. I will have the pleasure to meet you very soon 143 on another part of the planet, and as they say in Japan: “Sayonara”
